The weather is getting cooler, try this warming soup which is one of our favourites!
Spiced Carrot Soup
Ingredients:
- 500g chopped carrots
- 1 sweet potato, peeled and chopped
- 1 brown onion, chopped finely
- 2 crushed garlic cloves
- 1 small red chilli, seeds removed and finely chopped
- 1 teaspoon grated fresh ginger
- 2 kaffir lime leaves
- 1 litre chicken stock
- 1 tablespoon light olive oil
- 2 tablespoons palm sugar
- 2 tablespoons fish sauce
- Juice of half a lime
Coconut Cream
Ingredients:
- 200ml coconut cream
- 150ml thick cream
Method:
Spiced Carrot Soup
- Heat the oil in a saucepan over medium heat, add the onion and cook for 2-3 minutes or until softened.
- Add the garlic, chilli, ginger, carrot, sweet potato, lime leaves and stock. Bring to the boil and then reduce the heat to low and simmer for 20 minutes.
- Allow to cool slightly, then puree in the blender. Pass the puree through a sieve then season.
- Return to the pan with lime juice, sugar and fish sauce and gently reheat.
Coconut Cream
- Whip the creams until thick.
Pour the soup into bowls and top with coconut cream.
