Chilli Pickled Pineapple and Cucumber Salad

One of our most popular Summer salads, of fresh pineapple, Lebanese cucumbers and red chillies in a delicious vinegar syrup dressing

Method:

Place the vinegar, sugar, salt and 1/2 cup of water in a saucepan and bring it to a simmer, stirring until the sugar is dissolved.

Allow to cool to room temperature.

Combine the cucumber, pineapple, eschallots and chillies in a bowl.

Pour the syrup over the top and serve at room temperature.

Salad Ingredients:

  • 2 x Lebanese cucumbers, peeled and sliced
  • 2 x cups fresh pineapple pieces
  • 3 x Eschallots, sliced
  • 2 x large red chillies, cut into thick slices
  • Vinegar Syrup
  • 1/2 cup white vinegar
  • 1/2 cup sugar
  • 1/2 tsp salt

Vinegar Syrup Ingredients:

  • 1/2 cup white vinegar
  • 1/2 cup sugar
  • 1/2 tsp salt
